The kidney-type beans are speckled white and reddish-brown--and, when cooked, they have a creamy texture and extremely tender skins. Recognized by SlowFood USA for superior flavor, Jacob's Cattle Shell Beans hold their shape and maintain their distinctive flavor when cooked. They can be used as a shell bean or dry bean.
