Climbing beans, including varieties like 'Kentucky Wonder' and 'Blue Lake,' are vigorous climbers that can handle the heat of the southern summer. Lima beans prefer warmer temperatures and can be sown directly in the garden in most hot zones. Some heat-resistant bush bean varieties like 'the Hulk' and 'Roma II' can be grown successfully in the South—plus, bush bean varieties that have shorter maturation times to avoid excessive exposure to summer heat.
