A nantes-type, Cosmic Purple Carrot has cylindrical, 7-in. roots with smooth purple skins and an orange, coreless interior. The crunchy, very sweet roots have just a hint of spiciness and are a colorful addition to relish trays and salads. They're excellent cooked and roasted too! These carrots retain their purple color even with cooked. Like many other purple vegetables, Cosmic Purple Carrots contain antioxidants, called anthocyanins. Its 10- to 15-in. edible tops can be added to salads or cooked in other recipes. 70-80 DAYS.
