Unique white acorn squash has a white rind and interior—and resembles mashed potatoes when baked and whipped. Mashed Potatoes Hybrid Winter Squash has half the calories and a lower glycemic index than potatoes. The compact vines save space in the garden and produce about 3-4 fruits each. When cooking this squash, cut it in half and scoop out the seeds. Bake facing down on a baking sheet for at 35 min. at 425 degrees F, or until spots of skin turn golden.
