The spears are not heat resistant, but Jersey Giant is well adapted to the South, as is evident by its inclusion on the recommended varieties list of ten Southern states' university extension services (sweeping from Arkansas across to Georgia and Virginia, and every state in between). Heat above 70°F will cause the spears to "open" early, so cutting before the spears exceed 5" will be necessary to ensure sweet, tender flavor. Tolerant to rust, Fusarium, other foliar diseases and crown rot. Largely male hybrid produces very high yields.
