Chives are a must-have herb that are as pretty as they are flavorful--and they're a favorite of pollinators. A relative of the onion, this long-lasting, perennial herb has edible cylindrical, hollow leaves and lavender, pom-pom-shaped flowers that bloom in early summer. The leaves can be harvested all summer long. Chives are ideal for planting in herb gardens, the vegetable garden, containers or the edible landscape. Many home cooks love to grow them near a door so it's easy to walk outdoors and snip a few leaves to flavor potatoes, eggs, soups, sauces and salads.
