Saffron Crocus delights when its blooms in late summer to fall. The lavender blooms with red stigmas add charm to perennial gardens, herb gardens and rock gardens. They're also stunning when planted in sweeping drifts. Growing 4-5 in. tall, this fall-flowering crocus is very ornamental, but can also be used for culinary purposes. The stigmas can be removed and dried for later use as saffron, a seasoning for risotto, paella and other recipes. For best results, plant in well-drained soil in full sun to partial shade. Zones 5-8
