I had never seen them growing -I harvested them and gave to neighbors, the plants flowered (happy to know that they are edible also) and couldn't get anyone to tell me what to do with them, just that you can eat them, stores were useless information. I didn't have a computer and anyway, moved out of state and could never find them anywhere, now back in Carson City and would like to grow them in my yard now. Hope to get tubors, wonderful raw and only take a few square feet of space and worthwhile for families to have year around salads and cooked safe food. They are wonderful as a side with winter vegatables-collards, cabbage, turnips, rutabagas, etc. They are also great as an appetizer. Thoroughly clean (but do not peel) and pack in jars (may need to cut large pieces into bite-size sections)and fill with a vinegar, water, sugar mixture. add hot peppers to give some heat if desired.
